Mike's Chicken Carcassa Soup
Mike's Chicken Carcassa (9 hour) Soup

"Did you pick-up a roast chicken and now you're not sure what to do with the leftovers (the carcass)? Dig out your crock pot!"


-Roast chicken leftovers (the cooked chicken carcass), whole.
-One onion, chopped.
-Two large carrots, chopped.
-Two celery stalks, chopped.
-One large potato, chopped.
-Two green onions, finely chopped.
-One glove of garlic, chopped.
-Six cups of cold water.
-Two tablespoons of chicken soup stalk.
-Salt (some), pepper (some more), oregano (lots).

-Cook in crock pot for 6-7 hours on high.
-Remove carcass and bones with slotted spoon (note: there will be many bones and pieces of bone, so be sure to get it all).

-NOTE: IT IS SO IMPORTANT TO REMOVE ALL THE BONES (CHOKING HAZARD). See the suggestions below for handling the bones.

-Add one cup of cooked rice or noodles.
-Continue to heat on LOW for 2-3 hours.

-Serve.

Hey Mike,
I have a suggestion to a potential problem with the many small bones that could get left in the soup and become a choking hazard...use a loose knitted cheesecloth and wrap the carcass, as you put it, in the cheesecloth.  Tie it in a small knot or use butcher's string.  Once the soup is done, wring out the cloth of its juices in the pot and discard the cloth.
I was told that this is a method used for spices, especially leafy spices such as bay leaves.  I had one sharp leaf stuck in my throat once after having a soup and the chef looked a little panicked because he said that all the sharp edged spices get wrapped in cheese cloth for easy removal to prevent choking.
Man, my throat was sore for a while.
